½cupranch dressingor your preferred dressing

Instructions
Step 1: Prep the Grill and Skewers If using wooden skewers, soak them in water for 30 minutes. Preheat grill or grill pan to medium-high heat.
Step 2: Season the Chicken Pat chicken cubes dry. Toss with olive oil, salt, and pepper in a medium bowl.
Step 3: Assemble the Skewers Thread chicken cubes evenly onto the skewers.
Step 4: Grill the Chicken Brush skewers with BBQ sauce. Grill 3-4 minutes per side until cooked through with visible grill marks.
Step 5: Assemble the Salad Combine romaine, cherry tomatoes, corn, cucumber, and red onion in a large salad bowl.
Step 6: Dress and Serve Toss salad with ranch dressing. Divide among plates and top with two BBQ chicken skewers per serving. Serve immediately.
Notes
Marinate chicken in BBQ sauce for 20-30 minutes for extra flavor. No grill? Use a grill pan or broil in the oven 4-5 minutes per side. Optional toppings: avocado, black beans, shredded cheese.
