6ozgood quality vegan semi-sweet or dark chocolate chipsat least 60% cacao recommended
¼cupmaple syrupor agave nectar, adjust to taste
1tspvanilla extract
⅛tspfine sea saltenhances the chocolate flavor
Instructions
Prepare the Tofu: Open the package of silken tofu and carefully pour out all the liquid. Pat it gently with a paper towel to remove any excess moisture. Place the drained tofu block into the bowl of a food processor or a high-speed blender.
Melt the Chocolate: Place the vegan chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Alternatively, melt the chocolate in a double boiler over low heat.
Blend the Ingredients: Pour the melted chocolate into the food processor with the silken tofu. Add the maple syrup, vanilla extract, and fine sea salt.
Create the Mousse: Secure the lid and blend on high for 1-2 minutes, or until the mixture is perfectly smooth, creamy, and airy. Scrape down the sides of the bowl with a spatula once or twice during blending to ensure there are no lumps.
Chill Until Firm: Divide the mousse evenly among 4 small serving glasses, bowls, or ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until the mousse is firm and well-chilled. For a firmer set, chill for 4 hours or overnight.
Garnish and Serve: Once chilled, serve the mousse as is, or top with your favorite garnishes like fresh raspberries, chocolate shavings, a dollop of coconut whipped cream, or a sprinkle of cocoa powder.
Notes
Tofu is Key: It is crucial to use silken or soft tofu for this recipe. Firm or extra-firm tofu will result in a grainy texture and will not work.Flavor Variations: Feel free to experiment! Add 1 teaspoon of instant espresso powder for a mocha flavor, a pinch of cinnamon or chili powder for warmth, or 1 teaspoon of orange zest for a citrusy note.Storage: Store any leftover mousse covered in the refrigerator for up to 4 days. The texture will remain creamy and delicious.
