0.5cupsun-dried tomatoes in oildrained and chopped
0.25teaspoonred pepper flakesoptional
0.25cupfresh basilchopped
salt and black pepperto taste
Instructions
Pat the chicken cutlets dry with paper towels. In a small bowl, mix the salt, black pepper, and garlic powder. Season both sides of the chicken evenly.
Heat olive oil in a large skillet over medium-high heat. Add the chicken cutlets in a single layer and cook for 4–5 minutes per side until golden brown and cooked through. Remove the chicken and set aside on a plate.
Reduce the heat to medium and add the minced garlic to the skillet. Cook for about 30 seconds until fragrant, stirring constantly to prevent burning.
Pour in the chicken broth and use a wooden spoon to scrape up the browned bits from the bottom of the pan. Let it simmer for about 2 minutes to slightly reduce.
Lower the heat to medium-low. Whisk in the heavy cream, grated Parmesan cheese, chopped sun-dried tomatoes, and red pepper flakes if using. Continue whisking until the cheese melts and the sauce becomes smooth and creamy.
Return the cooked chicken and any juices to the skillet. Spoon the sauce over the chicken and let it simmer gently for 2–3 minutes so the flavors blend.
Remove the skillet from the heat and stir in the fresh basil. Taste the sauce and adjust with additional salt and pepper if needed. Serve immediately.
Notes
For the smoothest sauce, grate Parmesan cheese fresh instead of using pre-shredded varieties, which may contain anti-caking agents. If the skillet becomes crowded, sear the chicken in batches to ensure proper browning. If the sauce becomes too thick, add a tablespoon or two of chicken broth or cream until the desired consistency is reached.
