A hearty, cheesy, and comforting one-pot goulash made with ground beef, elbow macaroni, and a rich tomato sauce. Ready in just 30 minutes for a weeknight dinner.
Heat olive oil in a large pot over medium-high heat. Add ground beef and onion. Cook until beef is no longer pink and onion is softened, about 5-7 minutes. Add garlic and cook 1 more minute.
Stir in tomato paste and cook 1 minute. Add diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Mix well.
Bring to a simmer. Add uncooked elbow macaroni, reduce heat to medium-low, cover, and cook 10-12 minutes until pasta is al dente, stirring occasionally.
Remove from heat. Stir in 1 cup of shredded cheddar cheese until melted and creamy. Serve immediately, topped with remaining 1/2 cup cheese.
Notes
Add extra beef broth if goulash is too thick. Optionally include diced green bell peppers with onions. Store leftovers in an airtight container in the refrigerator for up to 4 days.
