Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or place an oven-safe wire rack on top of the baking sheet to allow fat to drip off.
Cut the 8 oz block of sharp cheddar cheese into 12 to 16 uniform cubes, roughly 1-inch in size. Take one slice of bacon and wrap it tightly around each cheddar cube. If needed, secure the bacon with a toothpick, ensuring it goes through both ends of the bacon and into the cheese to hold it in place.
Arrange the bacon-wrapped cheddar cubes in a single layer on the prepared baking sheet. Bake for 25-30 minutes, or until the bacon is crispy and golden brown, and the cheese is melted and bubbling. Carefully remove from the oven, let cool for a few minutes before serving. Remember to remove toothpicks before serving if used.
Notes
For an extra kick, try adding a thin slice of jalapeño with the cheese before wrapping in bacon. You can also experiment with other hard cheeses like Gruyere or Monterey Jack. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in the oven or air fryer.
