1can (14.5 oz)diced tomatoesundrained
1can (13.5 oz)full-fat coconut milkshaken well
2tbspfresh parsleychopped, for garnish
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and diced onion. Cook, breaking up the meat with a wooden spoon, until the beef is browned and the onion has softened, about 5-7 minutes. Drain off any excess grease.
Stir in the minced garlic and cook for another minute until fragrant.
Add the diced carrots, celery, and potatoes to the pot. Sprinkle in the Italian seasoning, smoked paprika, salt, and pepper. Stir everything together to coat the vegetables in the spices.
Pour in the beef broth and the undrained can of diced tomatoes. Stir to combine, scraping up any browned bits from the bottom of the pot. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.
Remove the pot from the heat and stir in the full-fat coconut milk until well combined. Be careful not to let the soup boil after adding the coconut milk to prevent it from curdling.
Taste the soup and adjust seasoning with more salt and pepper if needed. Ladle into bowls and garnish with fresh chopped parsley before serving.
