Instructions
Step 1: Prepare the Mushrooms. Gently wipe the portobello mushroom caps clean with a damp paper towel. Carefully remove the stems by twisting them off. Using a spoon, gently scrape out the dark gills from the underside of each mushroom cap. This helps prevent them from releasing too much liquid during grilling and turning soggy, though it's an optional step.
Step 2: Marinate the Mushrooms. In a large bowl, whisk together the olive oil, balsamic vinegar, garlic powder, dried oregano, salt, and black pepper. Place the cleaned mushroom caps in the bowl and toss gently to coat them evenly with the marinade. Let them marinate at room temperature for at least 10 minutes, or up to 30 minutes for more flavor, flipping halfway through.
Step 3: Preheat the Grill. Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). Lightly grease the grill grates with a high-heat cooking oil or spray to prevent sticking.
Step 4: Grill the Portobello Caps. Place the marinated mushroom caps gill-side down (or the side where the gills were removed) on the preheated grill. Grill for 5-7 minutes per side, or until the mushrooms are tender and have nice grill marks. During the last minute of grilling, you can lightly toast the burger buns on the grill if desired.
Step 5: Assemble and Serve. Remove the grilled portobello mushrooms and toasted buns from the grill. Place a grilled mushroom cap on the bottom half of each bun. Add your favorite toppings such as lettuce, tomato, red onion, pickles, or a slice of cheese (which can be melted on the mushroom during the last minute of grilling). Top with the other half of the bun and serve immediately.
Notes
For an extra layer of flavor, try adding a pinch of smoked paprika or a dash of soy sauce to the marinade. If you don't have a grill, you can cook the mushrooms in a hot grill pan or even roast them in the oven at 400°F (200°C) for 15-20 minutes. These burgers pair wonderfully with a side salad, sweet potato fries, or a fresh coleslaw.
