Instructions
In a large bowl, combine the chicken tenders with Cajun seasoning, 1 tablespoon of olive oil, garlic powder, salt (if using), and black pepper. Toss well to ensure all chicken pieces are evenly coated. Let marinate for at least 5-10 minutes while you heat your skillet.
Heat a large skillet over medium-high heat and add 1-2 teaspoons of olive oil. Once hot, add the chicken tenders in a single layer, making sure not to overcrowd the pan. You may need to cook in batches.
Cook the chicken for 3-5 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). If cooking in batches, remove the cooked chicken and set aside.
Once all chicken is cooked, return it to the skillet (if cooked in batches). Pour the BBQ sauce over the chicken and toss gently to coat each tender evenly. Cook for another 1-2 minutes, stirring, until the sauce is heated through and slightly caramelized.
Remove from heat, garnish with fresh parsley or cilantro if desired, and serve immediately with your favorite sides like rice, coleslaw, or a green salad.
Notes
For an extra kick, add a pinch of cayenne pepper to the seasoning blend. If you prefer baking, place seasoned tenders on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 15-20 minutes, flipping halfway, then toss with BBQ sauce.
