Step 1: Preheat & Prep Cauliflower. Preheat oven to 400°F (200°C). Wash and core the cauliflower, then cut it into bite-sized florets.
Step 2: Season. In a large mixing bowl, combine the cauliflower florets with olive oil, ranch seasoning mix, salt, and black pepper. Toss well to ensure all florets are evenly coated.
Step 3: First Roast. Spread the seasoned cauliflower in a single layer on a large baking sheet. Roast for 15-20 minutes, or until the cauliflower starts to tenderize and lightly brown.
Step 4: Add Cheese & Finish Roasting. Remove the baking sheet from the oven. Sprinkle the shredded cheddar cheese evenly over the cauliflower. Return to the oven and continue to roast for another 10-15 minutes, or until the cheese is melted and bubbly and the cauliflower is tender-crisp.
Step 5: Serve. Carefully remove from the oven. Let cool for a few minutes before serving hot as a delicious side dish.
Notes
For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning. This dish is excellent with grilled chicken or steak. Store leftovers in an airtight container in the refrigerator for up to 3 days.
