Instructions
Preheat your oven to 400°F (200°C). Prepare a large oven-safe skillet (cast iron or stainless steel works best).
Pat the pork chops dry thoroughly with paper towels. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, paprika, and dried thyme (if using). Season both sides of the pork chops generously with this spice mixture.
Heat the olive oil in the large oven-safe skillet over medium-high heat until it shimmers. Carefully place the seasoned pork chops in the hot skillet. Sear for 2-3 minutes per side until they develop a beautiful golden-brown crust.
Once seared, transfer the skillet with the pork chops directly into the preheated oven. Bake for 12-18 minutes, or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer at the thickest part. Cooking time may vary based on the thickness of your chops.

For thicker chops (1.5 inches or more), add a few extra minutes to the baking time. Always rely on a meat thermometer to prevent overcooking, as dry pork chops are no fun!
