Instructions
Step 1: Prepare the Fathead Dough. In a large microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for 60-90 seconds, stirring halfway, until melted and smooth. Stir in the almond flour, xanthan gum (if using), and half of the beaten egg until a cohesive dough forms. Knead briefly until smooth. If too sticky, add a little more almond flour; if too dry, add a touch of water.
Step 2: Make the Sausage Filling. In a separate mixing bowl, combine the ground sausage meat with onion powder, garlic powder, dried sage, salt, and black pepper. Mix thoroughly with your hands until all ingredients are evenly distributed. Do not overmix.
Step 3: Assemble the Rolls. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Divide the fathead dough in half. Place one half between two sheets of parchment paper and roll it out into a rectangle, approximately 8x10 inches (20x25 cm) and about 1/8 inch (3-4 mm) thick. Divide the sausage mixture in half and form one half into a long, even log, placing it along one long edge of the rolled dough. Carefully roll the dough over the sausage log to enclose it, pinching the seam to seal. Repeat with the remaining dough and sausage mixture.
Step 4: Slice and Prepare for Baking. Cut each sausage log into 4-6 individual rolls, depending on your desired size. Place the keto sausage rolls seam-side down on the prepared baking sheet. Beat the remaining half of the egg with a tablespoon of water to create an egg wash. Brush the tops and sides of each roll with the egg wash and sprinkle with sesame seeds if desired.
Step 5: Bake and Serve. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the sausage meat is cooked through (internal temperature of 160°F/71°C). Allow to cool for a few minutes on the baking sheet before transferring to a wire rack. Serve warm with your favorite low-carb dipping sauce, like sugar-free ketchup or mustard.
Notes
For an extra kick, add a pinch of cayenne pepper or red pepper flakes to the sausage mixture. These sausage rolls are excellent for meal prep; they can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 1 month. Reheat in the oven or air fryer for best results.
