Instructions
Place the chicken breasts at the bottom of a 6-quart slow cooker. Scatter the chopped onion, carrots, celery, and sliced mushrooms over and around the chicken.
In a separate bowl, whisk together the uncooked wild rice blend, chicken broth, dried thyme, garlic powder, salt, and black pepper. Pour this mixture evenly over the chicken and vegetables in the slow cooker. Do not stir.
Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is cooked through and tender, and the rice has absorbed most of the liquid.
Once cooked, carefully remove the chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker.
Slowly pour in the heavy cream and stir gently to combine everything. The mixture will become rich and creamy. Let it heat through for another 10-15 minutes on the LOW setting (or WARM if your slow cooker has it).
Taste and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with fresh chopped parsley.
