Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper. In a large skillet over medium-high heat, cook the ground sausage until it is browned and cooked through, breaking it apart with a spoon as it cooks. Drain off any excess grease from the skillet.
Reduce the heat to medium and add the chopped spinach to the skillet with the cooked sausage. Cook, stirring frequently, until the spinach has wilted completely, about 2-3 minutes. Remove the skillet from the heat and stir in the softened cream cheese, garlic powder, and onion powder. Season with salt and pepper to taste. Mix until everything is well combined and the cream cheese is melted into a creamy filling. Set aside.
In a medium mixing bowl, combine the 2 cups of shredded mozzarella cheese and the 2 lightly beaten eggs. Stir until thoroughly mixed. Divide this cheese mixture into four equal portions on the prepared parchment-lined baking sheet.
Using a spatula or the back of a spoon, spread each portion of the cheese mixture into a thin, even rectangle, approximately 6x4 inches in size. Bake for 10-12 minutes, or until the edges are golden brown and the cheese is bubbly and set in the center. Remove from the oven and let the cheese 'wrappers' cool on the baking sheet for 2-3 minutes so they are firm enough to handle.
Spoon about a quarter of the sausage and spinach filling onto one end of each cheese wrapper. Carefully, while they are still warm and pliable, roll each wrapper up tightly around the filling. You can serve them immediately, or place the roll-ups back in the oven for an additional 2-3 minutes to ensure they are heated through completely. Serve warm.
Notes
Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or a toaster oven. Variations: Feel free to add other keto-friendly vegetables to the filling, such as sautéed mushrooms or finely diced bell peppers. You can also use different types of cheese for the wrappers, like a cheddar or provolone blend. Tip: Do not let the cheese wrappers cool completely before rolling, as they will become brittle and crack. They need to be warm to be flexible.
