Instructions
Prepare and Steam Cauliflower: Wash and trim the head of cauliflower, then cut it into uniform-sized florets. Place a steamer basket in a large pot with about an inch of water. Bring the water to a boil, add the cauliflower florets to the basket, cover, and steam for 10-12 minutes, or until the cauliflower is very tender and can be easily pierced with a fork.
Drain Thoroughly: This step is crucial for a creamy, not watery, mash. Once the cauliflower is tender, remove it from the pot and drain it very well. For best results, spread the hot florets on a clean kitchen towel or paper towels and pat them dry to remove as much excess moisture as possible.
Blend Ingredients: Transfer the hot, dry cauliflower florets to the bowl of a food processor. Add the softened cream cheese, butter, garlic powder, salt, and optional black pepper.
Process Until Smooth: Secure the lid and process on high until the mixture is completely smooth and creamy, scraping down the sides of the bowl once or twice as needed. Be careful not to over-process, as it can become gummy. Alternatively, you can use an immersion blender in a large bowl.
