This festive Loaded Leprechaun Popcorn is a sweet and salty snack perfect for St. Patrick’s Day celebrations. Crunchy popcorn is tossed with pretzels, green candies, marshmallows, and coated in creamy white chocolate, then topped with colorful sprinkles for a fun, magical treat that’s easy to make and share.

Instructions
Line a large baking sheet with parchment paper to prevent sticking.
In a very large bowl, combine the popped popcorn, mini pretzels, green candies, and mini marshmallows. Gently toss until evenly distributed.
Place the white chocolate chips in a microwave-safe bowl. Microwave on 50% power in 30-second intervals, stirring between each interval, until smooth and fully melted.
If desired, stir a few drops of green gel food coloring into the melted chocolate until the preferred shade is reached.
Immediately pour the melted chocolate over the popcorn mixture. Using a spatula, gently fold and stir until everything is evenly coated.
Spread the coated popcorn mixture in a single layer on the prepared baking sheet.
Sprinkle the St. Patrick’s Day themed sprinkles evenly over the top before the chocolate sets.
Allow the popcorn to sit at room temperature for 1–2 hours, or refrigerate for 15–20 minutes until the chocolate is completely firm.
Break the popcorn into clusters and serve, or store in an airtight container.
