Instructions
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until fully browned. Drain any excess grease from the skillet.
Stir in the broccoli florets, beef broth, dried oregano, salt, and black pepper. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 8-10 minutes, or until the broccoli is tender-crisp.
Uncover the skillet. Add the softened cream cheese in small dollops around the pan. Stir continuously until the cream cheese is fully melted and incorporated, creating a creamy sauce that coats all the ingredients.
If desired, sprinkle the shredded cheddar cheese over the top of the mixture. Cover the skillet again for 2-3 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy your easy keto meal!
Notes
This recipe is highly adaptable! Feel free to substitute broccoli with other low-carb vegetables like cauliflower, green beans, or spinach. You can also add a pinch of red pepper flakes for a little heat. Leftovers store well in an airtight container in the refrigerator for up to 3-4 days.
