Instructions
Slice the hard-boiled eggs in half lengthwise. Remove the yolks and place them in a medium bowl. Arrange the egg white halves on a serving platter.
Mash the egg yolks with a fork until they form a fine crumble.
Add mayonnaise, softened cream cheese, diced jalapeños, shredded cheddar cheese, and crumbled bacon to the mashed yolks. Mix until smooth and creamy.
Season the mixture with salt and black pepper to taste and mix again until well combined.
Transfer the filling into a piping bag or a zip-top bag with the corner snipped off. Pipe the filling evenly into each egg white half.
Garnish with a sprinkle of paprika, extra bacon crumbles, and thin jalapeño slices if desired.
Refrigerate for at least 30 minutes before serving for the best flavor.
Notes
Add a pinch of smoked paprika to the filling for extra smoky flavor. The filling can be prepared one day ahead and stored in the refrigerator. Adjust the heat level by leaving some jalapeño seeds or adding a dash of hot sauce.
