Instructions
Step 1: Prepare the Dressing In a small bowl or jar with a tight-fitting lid, combine olive oil, balsamic vinegar, honey, Dijon mustard, and minced garlic.
Step 2: Mix the Dressing Whisk until smooth, or if using a jar, seal and shake vigorously for 30 seconds until emulsified.
Step 3: Season Add salt and freshly ground black pepper to taste. Mix or shake again to combine.
Step 4: Assemble the Salad In a large bowl, add spring mix, cherry tomatoes, red onion, and any optional ingredients.
Step 5: Toss and Serve Drizzle about half of the dressing over the salad. Gently toss until greens are lightly coated. Add more dressing as needed, toss again, and serve immediately.
Notes
You can store leftover dressing in the refrigerator for up to two weeks, shaking well before use. For a main course, add protein such as grilled chicken, shrimp, or chickpeas. Adjust sweetness or tanginess of dressing to taste.
